That is what food means to me. It’s a feeling, a memory, a story. It fills your soul with experiences and sensations, a transference of the creator’s essence lifted by the atmosphere and environment in which they subject their guests to. Everything humming in a delicate balance between bursting umami and bright acidity, fuelled by an enigmatic space and energetic team. And when you take a bite, every detail around you engrains itself as a tingle on your tastebuds, dancing to what may seem like a spontaneous charleston or romantic waltz, but is all a very well thought out and carefully choreographed routine.

Perhaps we should’ve known I would end up in food and hospitality. My parents always tell the story of my cousins running under the banquet table when we were kids, weaving between the legs of aunties and uncles trying to play hide and seek. I was sitting quietly in my high chair, short little feet swinging back and forth as I stuffed my face with food for three hours straight, always patiently waiting for the next course.
Guess some things never change.
